Beshock Ramen & Sake Bar – Carlsbad We arrived right at opening and secured a perfect table in the back near the open kitchen—my favorite place to watch the craft in motion. I started with an ice-cold Sapporo, the ideal beginning. Beshock’s Hokkaido flour noodles and broth, slow-cooked for 10 hours, create deep, rich flavors that only come from patience and a true made-with-love process. Appetizers: • Spicy garlic edamame • Shoyu chicken karaage • Nagoya roll with avocado and eel • Soft-shell crab buns The modern warehouse atmosphere, indoor and outdoor seating, and full bar make this a place I’d happily return to again and again. Kobe and Melissa were exceptional—anticipating needs before we even realized them and offering thoughtful recommendations that elevated the entire experience. Main: Tan Tan Ramen with chashu and half egg (spicy): bold, balanced, and deeply satisfying. You can feel the passion in both the kitchen and the service. Easily among the best ramen I’ve had outside of Japan—and absolutely a place we’ll be coming back to. Located in Carlsbad at the mall. Parking can be tight and seating limited, so arriving early is a smart move.
I ordered spicy miso and a salmon appetizer. The salmon was okay but the ramen is so undercooked, noodle was raw and the broth was barely warm. I asked server to warm it up for me, she said they will remake it. But she actually took the same bowl back to me, which was fine cuz I only asked them to reheat it. But the veggies were replaced I suppose they don’t want me to find out it’s the same bowl. I ordered extra bok choy which was $1.5, and I only got 3 pieces of it. Which makes it even worse is that 2 of the 3 had yellow dots on the leaves. After all of this I’ve lost my appetite. So I just took my check and left. Just a fair warning to everyone, they might serve your food undercooked and with non fresh vegetables in it.
Japanese ramen tastes like instant noodle, it’s the lowest end in noodles. I hope it was fresh noodle. All toppings are awesome, just the noodle, can be better. Not recommended if you are used to home made Korean fresh noodles.
We ordered Salmon Rolls and the rice was so sticky & overcooked, my first bite, I felt like I was eating Mochi. We did complained to the manager and she told the chef. We hope that's been fixed. On the other hand, the Ramen was really good! The noodles were little thicker than usual and it was not overcooked. The broth was fabulous and the pork was really tasty and it melted in your mouth. They also put corn that was cooked over fire and it was a bomb! I would recommend the Ramen but not the Sushi.
I must say, as someone who is not a big fan of ramen, i loved this place! I ordered the vegetarian ramen bowl with fried tofu… yum! The service is fast and the drinks are delicious. I recommend the ube ones.
I ordered delivery, so perhaps it’s different in-restaurant - but the portions were quite pithy. The broth didn’t come close to filling the bowl, and it was so salty. I can’t even comment on the flavor of any of the ingredients, because the salt was so overpowering. The fried tofu was rather under-fried. I don’t know, maybe I got a bad batch, but it was rather disappointing.
Fun Ramen spot! Busy place in The Shoppes. Servers were friendly and helpful, food was fine. Loved the flower garnish!
